In the heart of Brazil, between the rolling hills of Cerrado and Mogiana, coffee is more than just a crop—it's a living tradition.
This selection, with Mundo Novo and Catuai beans, carries within it the sweetness of the earth, the warm sun, and the care of the farmers. Delicately roasted, omni light, it preserves all that is most sincere in a cup: balance, warmth, and tranquility.

Processing: Natural (dry process)
Profile: Medium body, low acidity, sweet notes of chocolate and hazelnuts.

Roasting

Omni light roasting brings out the natural sweetness and notes of chocolate, hazelnut, and caramel, providing balance in both espresso and brew.

Brewing

Ideal temperature: 90-96°C – to release the delicate aromas and natural sweetness of the beans.

Coffee to water ratio: 1:15 – 1:18, depending on whether you prefer a stronger or lighter drink.

Recommended methods:

French Press: For an intense flavor and full body, use 10-12g of coffee for every 150ml of water, leaving it to infuse for 4 minutes.

V60 or pour-over: For a clear and aromatic extraction, use a filtration method, gradually pouring water over the coffee and letting it flow slowly into the cup.

Espressor: Ideal for fast and intense extraction, using 9 bar pressure for a balanced result.

AeroPress: A versatile method for coffee with intense body and aroma, adjusting the infusion time according to preference.



Infusion time: Depending on the method chosen, between 2 and 4 minutes for optimal extraction.

Tips: To highlight the sweetness and subtle aromas, I recommend using fresh water and not over-infusing the coffee to avoid a bitter taste.
